Fruit is extremely important in making pálinka because the fruit – as the only ingredient - determines the quality of this spirit. And growing whatever fruit variety used for pálinka to its optimum flavor and richness involves the trifecta of growing it in special soil, with the right amount of sunlight and the unique ground water in the Carpathian Basin, which comprises most of Hungary. These special microclimates are unique to Hungary.

Because of these optimal climate and soil conditions fruit grown has sufficient glucose and natural skin-yeast content to start the natural fermentation process.  And because true pálinka uses no other ingredients or extra sugar added in its distillation process, this is a must-have in producing the highest-quality pálinka.
