Surprisingly, summer apples have low and winter apples (also called late-ripening varieties) have high sugar content. Therefore, in general, the latter are more preferred for pálinka making. Still today apples are often an underrated pálinka ingredient in Hungary, despite the fact the shear diversity of this great fruit makes apples an amazing pálinka basis.
