This 110 Proof Zimek Plum 55 Pálinka is made from only one native variety of plum. This Lepotica Csacsanska, which has dark blue skin and is strongly ashy, has slightly hard, greenish-yellow flesh at its early ripening stage and becomes very crunchy when fully ripe. This fine pálinka - made exclusively from this plum variety - returns this ashiness and the deep plummy aromas of fruit.
