Pomace pálinka is made by the distillation of grape marc left after the production of wine. Interestingly, pomace pálinka is the oldest type of pálinka. It has been drank for centuries after heavy meals as a digestive. First records of pomace pálinka making date back to the 15th century and by the 17th century its distillate was already so widespread and popular in Hungary that it had to be regulated by law.
